If you were to ask my what is my go to meal then I would say a good sandwich that is hearty and easy to make. Vegan Guacamole Chickpeas Sandwich made it to my favorite list recently. I made this once as I had left over guacamole, by the way this was a great way to repurpose it and since then it’s has been added to our weekly menu. Both my husband and I thought this tasted so delicious as it has all the flavors in it. The crunch from onions and cilantro, the mushiness from avocado and the bite from chickpeas in between soft bread tastes like heaven in the mouth. The jalapeños add the right amount of spice to this sandwich. Bonus points for covering all the food groups and fitting it into your diet. Now I want to see you make this sandwich and send me a picture !!!!!
